Vinegar..cloves...cinnamon..cocoa...its the cumin I wince but that is me and an unfortunate episode of the misses going on a month-long cumin infatuation. Yeah, I'll give it a shot.

20200512 13:36 trailing wife Today we’re making a tarted up version of my darling mother-in-law’s chili recipe. Mr. Wife happily chops vegetables for me and cleans the kitchen to induce me to cook it.

Huguette Sawicki's Chili con Carne
Notes:
This recipe tastes even better reheated the next day, and can be frozen up to 6 months.
Makes about fourteen 2 cup (320g) servings.
Using the beef fat left over from browning the meat to saute the vegetables deepens the beefy flavor.
Prep time: 1 hour and 15 minutes
Cook time: 2 hours to overnight

vegetable or olive oil
3 pounds ground beef chuck
2 medium onions (1 lb.), diced
4-5 stalks celery, diced as a q
4 bell peppers, seeded and diced
salt
3 cloves garlic, minced or pressed
2 15 oz. can of light red kidney beans, drained and rinsed
2 15 oz. cans of dark red kidney beans, drained and rinsed

1/2 cup red wine
3 10 oz cans of condensed tomato soup
2 bay leaves
1 1/2 Tbsp. oregano
3 Tbsp. chili powder
1 1/2 Tbsp. paprika
½ tsp cinnamon
1 tsp unsweetened cocoa powder
1 tsp epazote, (a Mexican herb that reduces gassiness when eating beans)
1 tsp cumin, ground
1 tsp peppercorns, crushed
5 dried birds eye chilis, crushed

Frank's Red Hot Louisiana Cayenne Pepper Sauce, to taste
Tabasco sauce, to taste
4 chipotle chilis in adobo sauce, minced
¼ tsp each beef and chicken soup base (or ½ bouillon cube or 4 oz. soup broth each)

Optional:
3 Tbsp masa harina flour
6 Tbsp cold water

If cooking in oven, preheat to 225-250F.

Heat over medium-high heat 1 Tbsp oil in a 10” frying pans. Brown the ground beef, stirring to break up, then remove the meat with a large, slotted spoon to a crockpot or a 6-8 quart Dutch oven next to the stove. Pour off beef fat into a bowl, returning 1 Tbsp to pan, then add the onion to pan, sprinkle with a pinch of salt, and saute, stirring occasionally, until separated and softened. Add garlic to onions, then stir for 30 seconds to cook off raw flavour. Scrape over the ground beef in Dutch oven, then add 1 Tbsp of beef fat to pan, the celery, and a pinch of salt, and saute until deeper green and softened. Scrape into pot, then repeat with the bell peppers. Add the drained and rinsed kidney beans to the Dutch oven.

Pour ½ cup of wine into pan to deglaze, scraping up the browned bits as the alcohol boils off. Add tomato soup, and as it heats, stir in spices and flavorants, letting the heat bloom the flavors. Bring to a simmer, then add to Dutch oven. Fill soup cans with water, pour into pan and bring to a boil, once again scraping up the cooked on bits. Pour into Dutch oven. Cook chili in Dutch oven on stove over medium-low heat or put into preheated oven or turn on crockpot.

Simmer chili at least 2 hours on the stove or as long as overnight in a crockpot or oven, allowing the meat to absorb the flavors. (It should still be quite saucy.) If desired, when removed from heat make a slurry of the masa harina flour in cold water, then stir into chili to thicken it.

Serve with a nice sliced rye bread to dip up sauce, with or without butter, and if you'd like topped with grated cheddar cheese and/or sour cream or plain Greek yoghurt. Offer a hot pepper sauce for those who prefer it hotter.

This is nice with a good strong Beaujolais Nouveau or Chianti, or beer.

Homemade Chili Powder
Toast together in a dry skillet over medium heat until fragrant, let cool, then grind to a powder:

5 Tbsp ground mild chili peppers, eg. ancho chilis
2 Tbsp dried oregano
1 ½ Tbsp cumin
½ tsp. red pepper flakes
